We start our Lavender Infused Raw Honey by using honey harvested from the Lavender North Farm. We choose to cold infuse our honey, which means our honey is never heated and we do not use any essential oils or flavouring. Cold infusing the lavender in honey is a slow process that takes weeks to months to acheive the perfect flavour.
